Let's understand the differences between Desi Cow Milk (Gir, Sahiwal, Hallikar, Ongole & others) and Hybrid(European breeds) Cow Milk (HF, Jersey, and others). The key distinction lies in the type of beta-casein protein present in their milk. Desi Cows produce A2 beta-casein protein, characterised by a golden color and gentle on the gut with short-chain amino acids. Conversely, European breeds produce A1 beta-casein protein, linked to heart diseases and high cholesterol, while A2 protein aids in reducing cholesterol and promoting heart health. A2 milk is also believed to be more easily digestible, making it preferable for those sensitive to A1 milk.

Bilona Method (Desi Cow Milk - Curd - Butter - Ghee)

The Bilona Method involves the transformation of desi cow milk into curd, followed by traditional bilona (bi-directional churning) to extract butter, which is then heated to make authentic ghee. The remaining by-product is buttermilk, which is sold if there is a demand, typically more prevalent in the summer season.

 

The production cost of 1kg ghee amounts to Rs 1680, including expenses for 30 litres of milk (Rs 1350), ghee making (Rs 100), bottling/packing/labelling (Rs 50), and GST (Rs 180).

 

The selling price with a 10% margin is Rs 1850 per kg

Commercial Method (Hybrid Cow Milk - Cream - Butter - Ghee)

In the Commercial Method, ghee is produced using the cream extracted from hybrid cow milk, which costs Rs 35 per litre. The remaining skimmed milk is sold at a higher market price of Rs 20 per litre.

 

The production cost of 1kg ghee is Rs 675, including expenses for 30 litres of milk (Rs 1050 - Rs 600 from skimmed milk sale, resulting in Rs 450), ghee making (Rs 100), bottling/packing/labelling (Rs 50), and GST (Rs 72).

 

The selling price with a 10% margin is Rs 740 per kg.
